Recipe: Dia De Los Meurtos Ceviche Chef: Kari Karch Ingredients: 1-LB frozen calamari 3/4 cup fresh lime juice 2 tsp. sugar 1 tsp. salt 1/2 tsp. black pepper 2 tbs. fresh cilantro, chopped fine 1 tsp. dried oregano 1 tsp. dried marjoram 2 cloves garlic, chopped fine 1/2 medium red onion, chopped coarse 1/4 tsp. cayenne pepper 2 Jalapeno peppers, seeded, chopped coarse 2 red cherry peppers, seeded, chopped coarse 1 medium cucumber, peeled, seeded, chopped coarse several avocado slices Ghost Pepper Salt Method: The day before serving, completely defrost the calamari in the refrigerator. The next day, rinse the calamari bodies and cut into small ringlets. In a 2 quart bowl, prepare an ice bath using ice cubes and water. Bring 2 quarts of salted water to a boil and add the calamari. Return water to a boil and simmer 5 minutes. Strain the calamari through a colander and quickly plunge the squid into the ice bath. Soak until well chilled. Drain, place in covered plastic container, and store in refrigerator until needed. In a 2 quart bowl, add all of the ingredients except the calamari and last three ingredients. Mix well and

Walked to a “stealth” site near my home in an early cold and freshly snowed on 15º day. Cooked some lunch on my terrific minibulldesign mini-atomic alcohol stove. Had some cocoa in my DIY hammock (I love my hammock!) and yakked about some of my favorite and essential winter accessories. Set up the hammock in “real time” … 1 min. 30 seconds! Wrist warmers, gloves, gaiters and beanies are all touched upon. As usual …. I prattle on and act like a galoot. All secure in sector seven!

MAYA THOMAS-BEY- OHIO Maya Thomas-Bey has been caring for the young children and families of Cleveland, Ohio for over 25 years. Her tireless work has changed the lives of many. Maya works with inner city children and provides a safe haven many of them would not otherwise experience. In addition to her child care, she offers part of her home to a missionary that helps pregnant and parenting teen mothers. Once a month, more than 20 young women meet in her home to discuss important issues concerning their lives and their children; Maya offers child care free of charge while these young ladies attend classes. Maya’s efforts do not stop there, she also helps her families find places to live and items they need such as stoves, refrigerators and clothing. She has even moved them in her car just to make sure that the children are safe. Maya’s first career as an ER nurse has equipped her well to care for children with special medical needs. Her education and experience are also passed on to the children through lessons in Spanish, Geography, History and good citizenship. Cleveland is a better place because of Maya Thomas-Bey.

Neal Morse embarked upon the most ambitious musical project of his career. Entitled Testimony (2003), it chronicles his spiritual and musical journey in words and music. The 2 CD set (3 CDs for the Special Edition) spans over two hours as one continuous piece of music. It ranges in style from a full gospel choir to hard rock; from a symphony orchestra to contemporary pop. A deftly woven musical tapestry, the album takes the listener on a fascinating journey as unique as the man behind it. Artistically, Testimony was a remarkable solo achievement, with Neal not only writing, arranging and producing; but singing the lead vocals and performing most of the instruments. Recognized as a virtuoso multi-instrumentalist, he is endorsed as a guitarist, keyboardist and singer (Yamaha, Gibson, Rode Microphones, and others). Legendary drummer Mike Portnoy performed on drums, with guest guitarist Kerry Livgren ( Kansas) on several tracks. The mainstream and CCM press alike lauded Testimony as was one of the best progressive rock albums of the year. It received numerous honors, from Progressive World (Top 5 Albums) to The National Review (10 Best of the Year). The ensuing world tour was captured on one unforgettable night at the beautiful Dutch concert hall, (named only as a number) 013, during his European tour. I started disc golf last year and didn’t really care much about how I threw until winter. I’m still not very consistent with my throws. Now that I had a chance to see myself on video I noticed there are still quite a few bad habits I haven’t been able to get rid of. Need to pay more attention on those next time I go throwing. The discs I throw in this video are: Innova DX Stingray Innova DX Leopard Innova Champion Valkyrie Innova Pro Katana Innova Star Echo Katana (Presidents cup 2010) Discmania S-line CD Craze Discmania S-line PD Vibram X-Link Firm VP Katanas are way too fast for me still. I get almost same ranges with the Leopard. Usually my drives are around 80-90m. Longest I’ve thrown the Pro Katana is 113m. The discs I usually use at a course are P1 Maniac, VP, Stingray, Leopard, Valkyrie (Champion and Star, lost the latter last weekend tho), S CD when I need a bit more overstable disc and S PD when that is needed even more. Sometimes when I just need the distance I may go for the Pro Katana. So far I’ve only bought one of each disc I’ve tried as I’m still looking for those that fit for me.
